How it works

A greasy plate shows why water sometimes needs help. Soap molecules have a head that interacts with water and a tail that associates with grease. This divided character helps loosen oily material and keep it dispersed while rinsing carries it away.

Look closer

In water, surfactants can assemble into clusters called micelles, with water-compatible heads exposed and tails sheltered inside. Oil can be carried within these structures. Surfactants also help water wet surfaces by lowering surface tension. A cleaning product may use several ingredients and mechanisms, but this molecular arrangement explains a central trick: substances that interact differently with water and oil can help bring both into a mixture that flows off the plate.
